Review: New Walden Farms Chocolate Peanut Butter Spread

Walden Farms has been slowly but surely increasing their product line this past year: reworking their formulas, changing their labels, and adding new twists and interesting flavors to their lineup (Honey Dijon mayo, chipotle mayo, pomegranate mayo!).

Two of their newest products are the new Chocolate
Peanut Butter and Cinnamon Raisin Peanut Butter Spreads. As I have mentioned several times on this blog, I use their products as a base, and then build on it depending on what flavor and consistency I want, and what I'm using it for. I have been mixing their Peanut Butter and Chocolate Dip for years now.

I will review the Cinnamon Raisin Peanut Butter Spread in another post, and focus solely on the Chocolate variety today. Upon opening the jar, you immediately notice the slightly darker colored spread (cocoa) and the pleasant mild cocoa scent. As with all their products, this is calorie free, sugar free, fat free, gluten free, and kosher. Note that calorie free means less than 5 calories a serving and fat free means less than 0.5g a serving. If you want further explanation, please see my post on calorie counts. If you have any additional questions, please feel free to email or leave a message in the comment section.

*Since there are 12 servings a jar, the most this entire jar could have (of digestible energy) would be 59 calories (4.9cal* 12 servings).

The jar itself, and in fact all their new labels, look streamlined, modern, with a clear picture on the front depicting the spread slathered on a piece of toast. The product is nicely topped up in the jar, which is nice since their products are rather expensive for the size.

As I've mentioned numerous time before, I use their PB more as a pudding, and in many cooking and baking recipes (peanut satay, Thai and Asian inspired dishes, in pie crusts, shakes, desserts, yogurt, cottage cheese etc: I love mixing it with Bragg's Liquid Aminos, garlic, chili flakes, ginger and a few other items for a fantastic Asian marinade/dressing). That being said, I dove right in with a spoon to give it a taste. It is a little bit sour/bitter, and pretty much tastes exactly like if you had mixed a small amount of their Chocolate Dip or sauce and regular Peanut Butter Spread together.

I immediately (as I do with most of their sweet dips--chocolate, caramel, marshmallow, and peanut butter) added a packet of sweetener (I used the pink sweet'n'low, since it works the best to brighten up the flavor in these products), but you can add whatever you want. I think honey would work very well! I would like to add that I do not add the sweetener to make it sweeter per say; I add it to brighten up the flavor and make the flavor pop and be more noticeable and 'clear' if you will. I also added cinnamon, and tried a couple of flavor drops in it for fun. I also added some oat fiber and PGX granules for texture.

I cannot wait to use this in my baking, and between my cakes. This will work fabulously in my protein icing/frosting, in my pancake batter etc. For those not accustomed to their products, I don't recommend starting off with the peanut butter (their dressings/jams/BBQ/tomato basil pasta sauce/pancake syrup are great!), as the taste takes some getting used to. I'd recommend doing a half-and-half with either PB2/ FitNutz, or any regular nut butter. I cannot stress adding sweetener and cinnamon to this if you've never had it before! It makes a world of difference! Also try to incorporate it into your meals.

They have improved the consistency and flavor of the spread immensely from the first incarnation, making it thicker and have a more pronounced peanut flavor; make sure you get the black lids and NOT the green peanut butter jar if you are in a store, that is the old formula and most negative reviews are based on the old version. It should be noted that their peanut products do contain real peanut extract, so those with allergies or sensitivities, be warned.

I'd love them to make an Almond Butter spread! I am going to add a TB of cocoa powder when I get another jar, and make truffles with it as well (using cereal or GG Scandinavian Bran Crispbread sprinkles). I was planning to attempt in making protein cake balls (using the PB, protein cupcake, cocoa, sweetener, oat flour, and some sugar free pancake or Davinci syrup), but ran out of peanut butter.

These products are extremely versatile if you use them as correctly and as a base. I love adding this as a ripple or ribbon in ice cream, with their caramel dip and chocolate dips. Their jams (blueberry, apricot, and strawberry especially) are fantastic, and work very well in recipes. I suggest mixing it in with sugar free refrigerated ready-to-eat pudding (like Jello Sugar free vanilla cups, or any flavor; Kozy Shack sugar free rice pudding and sugar free puddings).

It's WHAT YOU MAKE OF IT!! Add sweetener, thickener, or thin it out to use as a dressing (you can add nutritional yeast as well!). Add fruit to smoothies, protein powder, flavored coffee creamer, sugar free syrups; mush it up with bananas, or add it right to the banana bread or muffin batter.

Overall, the Chocolate Peanut Butter Spread is an interesting addition to Walden Farms ever expanding line, and if used appropriately, can be a fun addition to your diet and in helping you reach your diet goals! Bottom line: it has potential! Much like house hunting, think of it as an investment that needs a few "fix ups", but you get great return on investment with all the calories you save! I like the regular peanut butter spread, and prefer adding my own chocolate so I can have control over the flavor. Adding protein powder (chocolate) is great as well.

Gluten Free and Naturally Sweet: CHESTNUT FLOUR!!

CHESTNUT FLOUR
Chestnut Flour, Natural, Raw - 1 bag, 1 lb
(image from amazon.com)

Gluten free has exploded in the past few years-from a fad diet to a legitimate dietary concern that many grocery stores and companies are taking seriously. From stores having entire sections for gluten free goods, to the explosion of new products and companies on the market, it seems gluten-free is everywhere. The more mainstream it becomes, the more profitable it will be for companies to produce, and the more products and varieties will be considered--a blessing for those suffering from Celiac disease or gluten intolerance.

While rice flour, almond flour, coconut flour, buckwheat flour and a host of others are quite popular and the norm in baked goods, CHESTNUT FLOUR is fairly unheard of, though a wonderful substitute for using (chestnut gnocchi is fantastic, as are baked goods!). It has been used for centuries in Europe (notably Italy and their wonderful Castagnaccio, or chestnut flour bread/cake), in France for crepes, and it slowly starting to percolate to North America. Thankfully, if you can't find it in specialty stores, we have Amazon, which offers a wide selection!

Naturally gluten free and sweet, this is a fantastic flour to experiment with. It doesn't come out rubbery like rice flour based products, and has a wonderful, slightly sweet nutty taste to it, which makes it perfect for sugar free/low sugar sweetened goods! Calorie-wise,  it is only about 95kcal per 1/4c, and unlike almond and coconut flour, has virtually no fat.

This is a wonderful and tasty alternative for those looking to cut gluten and/or fat and sugar from their baked goods! Give it a try, and let me know what you think! There are fantastic truffles, cake, gnocchi, and baked good recipes using chestnut flour online! Give it a try! CHESTNUT FLOUR

New Product Alert

Every now and then, I see a new product on the market that gets me excited. Occasionally, there have been times when I have been lucky enough to have played an integral role in creating the product; other times suggesting and recommending the idea for the product. Being in the nutrition and supplement industry as long as I have--with a marketing background as well-- I often come up with products/flavors that I can see being enjoyed by the vast majority of the public.

In this case, I merely suggested some flavors. I have been making "frozen yogurt" for as long as I can remember, and lately have been trying every yogurt under the sun. I emailed the people at Danone silhouette yogurt with a few questions/comments, among which I suggested some flavors that I would love to see their products selling and incorporating into their line. I am sure they have had thousands of requests, and mine just added to the already massive heap ( I must have sent approximately 25 suggestions--including cappuccino, coconut cream, a few pie/desserts, Tiramisu etc). Yesterday, while browsing the dairy isle at my local grocery store, ready to pick up my normal products, Silhouette's new packaging for their 16 packs caught my eye.... and so did their new "limited edition flavors". Having shamelessly professed my love of all things coconut, I have been searching high and low for a sugar free fat free coconut flavored yogurt. They have these in Europe at every corner store and yet aside from Liberte's fantastic Mediterranean line, have found barely any.

Of course I make my own coconut by mixing a vanilla/plain/Greek yogurt with Davinci's sugar free Coconut syrup (or Torani, Monin) or flavor drops, but it would be nice to be able to buy it pre-made. Although I take no credit for their new flavors (I wish!), Silhouette has expanded their line with:
Cappuccino, Caramel, Lemon Cake and Coconut Cream!

Naturally, I snatched a pack up immediately.  Despite the fact that Silhouette by Danone is much thinner and less creamy than the other 2 brands making fat free/sugar free delicious yogurts (Source and Astro Zero), possibly due to gelatin content, I still do enjoy these yogurts very much.

As with the other 2 brands, Silhouette claims to have only 35 fat free*, sugar free** calories per container or 100 grams.

In actuality, all these yogurts contain closer to 40 calories, since carbs and protein have 4kcal/gram and fat has 9 calories per gram. See not below on the meaning of fat free (which means 0.5g or less). If you calculate the carbs and protein alone--not even taking into account the less-than-0.5g fat clause, we are already at 36 calories. Adding the fat, for example using 0.4g of fat (which is considered fat free), we get:
 6g carb*4+(3g protein *4cal)=(0.4*9g fat)= 39.6 calories= 40 calories, and this is minimum.

My favorite way to enjoy them is with PGX granules sprinkles stirred in ( I sometimes add some sugar free syrup), or frozen! I will be posting a recipe for my go-to easy frozen yogurt in the future, so stay tuned!!! The key to making it properly is the container you freeze it in and the consistency of the yogurt itself. I find that if I don't do these correctly, the silhouettes sometimes form ice crystals, whereas the other 2 brands are less inclined to do so. However, their yogurts are wonderful and very versatile. I like their new flavors-- they are nice, smooth,  mild, and not at all over powering.
Silhouette has a nice variety of 17 flavors and I enjoy their limited editions! I hope these stick around for a long time!

*According to their site:
"Silhouettes is a product with 0 grams of fat. Nada, zip, absolutely no fat. However the Canadian Food Inspection Agency allows products to be called “Free of fat”, "fat-free", "no fat", "0 fat", "zero fat", "without fat", "contains no fat", "non-fat" as long as they contain :
(a) less than 0.5 g of fat per reference amount and serving of stated size; or
(b) less than 0.5 g of fat per serving of stated size, if the food is a prepackaged meal.
Danone achieves a fat-free yogurt by a skimming process with its milk to extract dairy fat. During Silhouettes' skimming operation, fat is separated from the milk which results in two products: skim milk and cream."

**Sugar Free means:
Silhouettes has no sugar added which means it does not contain added: white sugar, a food that contains white sugar, brown sugar, syrup, molasses, glucose, honey or fructose.
Silhouettes uses a sweetener called sucralose.
That said, "no added sugar" doesn't mean there is no sugar in the product. Silhouettes contains sugar in its natural form from milk (lactose) and fruit (fructose). Silhouettes Plain is the only flavour that does not contain fructose.

All for just 35 calories per servingCoconut Creme Fat-free flavour with no added sugar.

It's About Time! Company and Products Review!

Company Spotlight- ABOUT TIME

Anyone who is a fan of protein powders can understand the excitement of finding new flavors and trying new brands. There is much variability across brands and flavors (as anyone that has tried at least 2 different chocolate flavors can attest to). It is so exciting  finding a brand that emphasizes quality and uses ingredients that aren't full of chemical additives. Therefore, you can imagine how excited I was to try the About Time's products!

ABOUT TIME make a variety of amazing whey protein products that taste great. Besides being chemical, additive and SUGAR FREE, all their products are also 100% cold pressed, micro-filtered whey isolates, and they use stevia as a sweetener! This is great for anyone that is opposed to using artificial sweeteners, doesn't want the empty calories that come with sugar, has medical issues, wants something that is natural, or are watching blood glucose (blood-sugar) levels.

First up, their Protein Powder! These come in a variety of 'styles'-- from a tub, individual packets with 1 serving in them (so convenient and portable), to their pre-portioned "Shake, Fill, and Go" version.

Protein 2 lbs tubs
Whey Protein Isolate
The tubs are 2 lbs, and come in 11 delicious flavors:
- Peanut Butter
- Banana
- Chocolate Peanut Butter *NEW FLAVOR
- Unflavored Whey Isolate * New Flavor

Birthday Cake?! I was so excited to see this flavor, along with the Peaches and Cream, Banana, and Peanut butter! I love cooking/baking with protein- and these made amazing protein cakes, protein pancakes, loaves, muffins, shakes, protein pudding, protein frosties, protein ice cream, protein frosting... I could go on and on. Mixed into rtd sugar free pudding, Greek Yogurt, Cottage cheese, Ricotta... amazing

Fill, Shake, and Go
Shake N Go Bottles

The "Fill, Shake, and Go" containers have individual servings already portioned out in a ready-to-drink container. All you do is add you liquid of choice! These only come in 7 flavors (no peanut butter, chocolate peanut butter, or unflavored).

 Single Serve Packages

Single Serve Packets

These are also a fantastic way to try the product, and they are so convenient to carry around in your purse/bag etc! These also come in the 7 flavors, and what I LOVE about these is that you can mix and match flavors, or get a multi pack!

Meal Replacement Bars
MEAL REPLACEMENT BARS

These bars are made fresh and as all of their products, contain no artificial ingredients. They are sweetened with Agave Nectar, and are therefore low glycemic. So far these only come in two flavors:
-Oatmeal
- Carob and Coconut

Each bar contains 21grams of whey isolate and 4 grams of fiber:
I have been trying to suggest they make some smaller "snack" bars around 120-200 calories, and add more flavors.

Lastly, they also have little black athletic t shirts, which I think are adorable.
